Avocado Waffles

I love cooking. I love the creativity it enables me to express, the tasty new things that can come from playing around in the kitchen, and the simple joy I find in sharing this love with others. One of my favorite times to cook is on the weekend, putting together a yummy brunch. And this weekend was no different. I woke up without an alarm, made my first cup of tea, snuggled back in bed to read my bible and enjoy the quiet and cool October morning. It was peaceful and I was content, until about 45 minutes later when my stomach reminded me it also was awake and need sustenance. Apparently, tea was not enough to curb its need for fuel.

I wander into the kitchen and take a look around. I am craving avocado toast (as per usual!) and waffles this morning. So, then I kind of got this crazy idea. What if I combined avocado toast and waffles? Would it be good? Would it just be weird? Or could it actually be tasty and exactly what I was wanting in my life at this exact moment?

Well friends, guess what? I made myself some avocado waffles and my life will never be the same. On top of this being a super tasty meal, it also took less than 5 minutes from fridge to plate. Since my life is changed, I figured I’d let you in on my newest love and let you try it for yourself. One note before I dive in is, this was just what I did. The great thing about cooking is that you get to make it your own. So please play around and enjoy, and whatever the outcome, I’m sure it will be just as delicious! A few things I had on hand that needed to be used, which also contributed to the desire to make this meal: a tomato about to go bad, guacamole in the fridge browning by the second, and one egg that would get lost in the fridge unless it was cooked soon. These are the main ingredients of this morning’s brunch menu. OH YEAH, and the waffles. I used frozen, gluten-free waffles from Costco. Yes, I said frozen. Did you forget that part where I said it took 5 minutes to put together? Enter frozen waffles. You can roll your eyes all you want, or just live your best life and enjoy some super tasty frozen waffles from Costco. Or I guess you can make your own from scratch if you want, but like who has time for that on a Saturday morning when your stomach is screaming at you? Not me. But you do you, friends.

Anyways, place the frozen waffles in the toaster. I don’t like burnt toast or waffles, so I tend to only leave them in the toast for about 2-3 minutes, but toast to your heart’s (or stomach’s) content. While waffles are heating up, throw some EVOO into a nonstick pan, heat, and crack an egg in there. I like my eggs over medium, runny but not watery. Feel free to cook your eggs however you want, or don’t include them at all. If you like scrambled eggs, that is between you and the Lord, but you scramble up those eggs and go about your day. But over medium eggs cook for about 1.5 minutes on one side (depending on how hot your pan is) and then about 30 seconds on the other side. Toss some salt and pepper on top and you are good to go.

Life while your egg is cooking, your waffles have popped up, pull those out place them on the plate. Spread the guacamole over each waffle (I ate two this morning). I prefer making my own guacamole, but that was not in my timeline for this week. Your girl has had stuff to do! So the Lord will bless this pre-made smashed avocado (AKA guacamole) and move on. Then I sliced up my remaining Roma tomato and placed that on top of the waffle avocado stacks I have going. Salt and pepper go on the tomatoes as well, then goes the over medium egg, and then to top it all off, I added sugar-free syrup. Yup, you read that correctly. Syrup. I was a little unsure if I should add syrup at all, but apparently I was feeling daring this morning or maybe I was missing the State Fair of Texas which is going on right now at home, and I figured if they can put weird things together and it wins awards then gosh darn it, so can I! Plus, I usually like the sweet and salty balance in other brunch foods like chicken and waffles, so why would this be any different?

I sat down at the table for once. This was a special occasion and my normal eating from the couch just didn’t do this meal justice. I was a little hesitant to try my newest creation but finally dug in. And dug in again. And again. And again. And didn’t stop for another 4. 73 seconds when I licked that plate clean and felt completely satisfied. Ok so maybe I didn’t lick my plate, my mom did teach me manners, but I sure wanted to!
