Taco Soup: A Crowd Pleaser

There’s always one meal that is the easiest thing in the world and somehow also ends up being the meal you are famous for. Taco soup is my famous meal. Any of my friends can tell you at one point or another my taco soup has been made for them. Especially in college! It was a cheap meal, made quickly and fed a good number of people with one batch. It is also a great meal to clear out some of those cans in the pantry you haven’t used yet during this quarantine season!

NOTE: I can’t claim the recipe for this divine meal. In high school, one of my great friends bought this to school and traded me meals that day. My life has never been the same. So special thanks to the Talley’s and their taco soup recipe I have loved for almost 20 years.

Ok so no more delay, here’s one of my favorites just for you.

Ingredients:

1 pound of ground beef or ground turkey

1 packet of taco seasoning (I use mild)

1 packet of ranch seasoning

1 can of kidney beans

2 cans of corn

1 large can of diced tomatoes

1 large can of Ranch Style Beans (if these aren’t available use pinto beans!)

Here’s what you do:

  1. Brown the meat with a sprinkle of taco seasoning and ranch seasoning in the bottom of a large soup pot.
  2. Once the meat is cooked through, start opening those cans! Add in kidney beans, corn, diced tomatoes, and ranch style beans.
  3. Let it simmer for 30 minutes. And you’re done.
  4. Serve with any or all of the following toppings: tortilla chips, cheese, avocado, sour cream (or plain Greek yogurt).

It really is that easy. Takes no time at all. Freezes well and feeds anywhere between 6-10 servings depending on how large those bowls are. You can thank me later. I’d love to hear what your go-to crowd pleaser meal is! I am always up for some new recipes and easy meals.
